No-Bake Energy Bites

Sometimes you just need a little something sweet.  I get it.  I’m the QUEEN of needing a little something sweet (which usually turns into WAY too much of it)! Two years ago I found this recipe for No-Bake Energy Bites on Gimme Some Oven.  She also lists different variations of the recipe which I haven’t tried yet, but only because I just love this one so much!  You’ll see that I have altered the ingredients a tad bit.

First things first, I want to chat about a few of the ingredients that I use that are unique to my own version of this recipe.  I substitute Bulletproof’s Upgraded Chocolate Powder for the chocolate chips (I also use their Vanilla Max for the vanilla). A little goes a long way when it comes to this chocolate powder.  Chocolate chips are the bomb, but this upgraded chocolate powder is super high quality. It IS pricey, but oh so yummy. Don’t worry if you don’t want to use the chocolate powder.  Chocolate chips will be A-OK.

I also use a chia/flax seed blend at times but you can buy them separately if you wish! What are chia and flax seed, you ask? They’re often referred to as “superfoods” meaning they’re a nutrient-rich food considered to be especially beneficial for health and well-being. They’re loaded with fiber, protein, heart-healthy Omega-3 fatty acids and various micronutrients.

As for the honey, buying locally will ensure you get the purest form of honey around.  When raw honey is left in its natural state and is unfiltered, it contains antioxidants, enzymes and numerous other beneficial compounds.

Gimme Some Oven’s recipe calls for:

  • 1 cup (dry) oatmeal
  • 2/3 cup toasted coconut flakes
  • 1/2 cup peanut butter
  • 1/2 cup ground flax seed
  • 1/2 cup semi-sweet chocolate chips
  • 1/3 cup honey or agave nectar
  • 1 tablespoon chia seeds
  • 1 teaspoon vanilla extract

Just stir all of the ingredients together in a large bowl, roll into small balls and place on a wax paper covered cookie sheet. Put in the freezer for 30 minutes, pull them out and ENJOY!

  1. Made these yesterday and they are scrumptious, and a perfect grab to fill you up! We used the Bulletproof chocolate powder, 1/2 cup, and it was perfect. The Justin’s peanut butter wasn’t moist enough, so we added a few tablespoons of regular crunchy and it made a great mixture. Also fun to use the wonderful vanilla I picked up in Puerto Vallarta. These will be regulars in our house, thanks Jodi!
